Green Machine Shakshuka
Shakshuka is a delightful Mediterranean breakfast dish that offers a delicious and convenient way to incorporate vegetables, protein, and carbs into your morning routine! This recipe for Shakshuka is incredibly GREEN, fresh, and bursting with flavor!

INGREDIENTS
2-4 tablespoons olive oil
• 1/2-1 leek
• 1 bundle asparagus
• 1 zucchini
• 3.5 handfuls spinach
• 1 can of coconut milk
• 5 eggs
To Taste:
• cilantro
• feta
• garlic powder
• salt
• black pepper
• onion powder
• turmeric
DIRECTIONS
Finely chop your leek, asparagus, and zucchini.
In a preheated pan, add 2-4 tablespoons of olive oil along with your leek, asparagus, zucchini, and 2 handfuls of spinach. Stir and cook on low-medium heat for about 5-7 minutes.
Transfer 1/3 of the vegetable mix to a blender with coconut milk and blend until smooth. Add it back into the pan.
Stir and add all spices to the pan. Roughly chop your remaining spinach and add it to the pan. Simmer for 5 minutes or until the veggies are cooked to your liking.
Crack 5 eggs into the sauce, leaving space between each egg to cook separately. Place a lid on the pan and cook for 5-7 minutes or until the egg whites have solidified.
Remove the lid and top with cilantro and feta.
Enjoy with your favorite (gluten-free) bread!
NOTES
.1. If you prefer a thicker sauce, do not blend your veggies.
