Vegan Caprese Inspired Salad

  • 1 tomato

  • 1 can heart of palm

  • Gotham Greens vegan pesto

    Optional

  • nutritional yeast

  • balsamic vinegar

INGREDIENTS

  1. Dice the tomato and cut the heart of palm into similar-sized pieces. Add them to a bowl.

  2. Add Gotham Greens vegan pesto to your liking.

  3. Optional: Sprinkle some nutritional yeast for a nutty, cheesy flavor.

  4. Enjoy this incredibly easy side dish or snack!

DIRECTIONS

Adding balsamic vinegar can take this dish to the next level. However, I skipped it because I prefer the simplicity of just using pesto.
