CATEGORY: Gluten-Free | Vegan | Snack | Dip

INGREDIENTS

  • 1 cup dry, green lentils

  • 1/4 cup tahini

  • 1/4 cup olive oil

  • 2 tablespoons of an acidic hot sauce (my personal favorite is Texas Pete)

  • 2 tablespoons finely chopped cilantro

  • 1 tablespoon minced garlic

  • 1/2 teaspoon cumin

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

DIRECTIONS

  1. Thoroughly rinse and drain green lentils, and cook according to instructions

  2. After cooking the lentils, rinse again with cool water

  3. Add cooked & rinsed lentils to a blender or food processor along with all other ingredients & pulse/blend until you have reached your desired consistency

  4. Adjust seasonings to taste

NOTES

1. 1. Rinsing the lentils is even easier using a fine mesh strainer

2. Enjoy this easy green lentil dip with your favorite veggies. My favorites are radishes, carrots, or cauliflower. Plantain chips are also a healthier alternative to potato chips for dipping.
